 Sarah and her husband Scott have two vibrant and curious sons, Theo and William, ages 7 and 1yr. Sarah grew up in a homeschool family right here in San Juan Capistrano, CA. After her first son was born, she couldn’t ignore her passion of being grounded in nature and love for nurturing children through outdoor play and education. The last few years in her journey of homeschool education, she's been a facilitator for Tinkergarten, an assistant teacher at both The Village Cooperative and The Ecology Center, formed a local nature exploration group called Taproots with her mom friends, and now has rooted her family in the Soaring Chicken Farm Ministry community.

Mandy serves as the Director of Operations at Soaring Chicken Farm and Ministry, overseeing day-to-day operations, volunteer coordination, and administrative systems while also joyfully stepping in to lead classes, camps and workshops. With a B.S. in Child and Adolescent Development and a Master’s in Business Administration, she blends strong organizational leadership with a deep heart for people and ministry.

At home, Mandy has been a homeschool mom for five years to her two children. She values the flexibility homeschooling provides and the opportunity for her children to explore their interests while growing in faith. Bible study and an awareness of God’s presence are woven throughout both home life and farm life, shaping a rhythm of purpose and gratitude.

Mandy has a genuine love for serving others and finds joy in connecting people with opportunities to grow, learn, and build meaningful community—preferably with a little farm fun along the way.

Heather is a homeschool mom to three girls, who share her love of the outdoors and animals. From the moment they set foot on the farm, Heather and her girls have felt at home. Heather has a heart for people. Whether she's lending a hand where it’s needed, or finding just the right person to step into a role, she's at her best when she's serving others and watching the right pieces fall into place. That same care and attention is what she brings to the ministry every day. She's constantly amazed by the wonderful people God has brought to Soaring Chicken Farm and by His perfect timing in bringing them together.

When she's not on the farm, you'll likely find Heather baking sourdough, jogging with her dogs, or curled up with a good book.

 Nicole, a former homeschooling mom, now serves as a camp instructor and teacher at Soaring Chicken Farm. She holds a certification as a master herbalist and flower essences specialist from the Trinity School of Natural Health, bringing a wealth of experience in working with children, plants, and animals. She believes that God has provided everyone with unique gifts and talents, and she is passionate about helping her students discover and utilize their divine gifts for His glory. Her teaching philosophy centers on making learning enjoyable and inspiring students to embrace lifelong learning. When not teaching, Nicole can be found at the beach or indulging in her favorite outdoor activities, such as gardening, hiking, taking road trips, and spending quality time with family and friends. Having honed her life skills while living and raising four children in the Blue Ridge Mountains of North Carolina, Nicole is eager to pass on her knowledge.

 Jessica has always had a lifelong passion for farm life, animal care, and children’s ministry. Homeschooled for a large portion of her education, she thrives in hands-on, creative learning environments. Growing up in a large family with four siblings and many younger cousins, Jessica developed a natural patience and joy for guiding children. She loves God, attends church regularly, and is thrilled to combine faith with a love for the outdoors. When not teaching, she can be found horseback riding, line dancing, woodworking, or exploring nature. Jessica cannot wait to help students discover the wonders of God's creation, learn new farm skills, and grow in their faith this year!

 Erin's bio: 

Since her teens, Erin has devoted herself to caring for children. She enjoys teaching, creative play, and helping imaginations grow. As a mother, she knows the importance of making every child feel seen and valued. Her love for nature and animals connects her deeply to Soaring Chicken Farm Ministry, a place she gladly supports. Erin’s goal is to create warm, memorable moments and to continue sharing love, patience, and joy with every child she meets. Erin loves getting creative with macrame, cooking with her children, singing, and spending time with her bird, Peanut.

  Rachel Simmons is an outdoorswoman, child educator, and therapist-in-training with a passion for helping children and families. She has three years of experience working in therapeutic and educational settings with kids and teens and is currently pursuing a graduate degree in Marriage and Family Therapy. Her love for nature and animals is rooted in her belief in the Creator and her desire to guide others in discovering the beauty of the earth. Originally from the Oregon Coast, Rachel has also spent nine months in the Arizona desert as a wilderness guide, where she deepened her skills in resilience and survival. She enjoys hiking, backpacking, reading, and traveling, always seeking new ways to grow and connect with creation. Rachel is excited to share her knowledge and learn alongside the Soaring Chicken Farm Ministry community.

 Yvonne is a dedicated mother and wife who has spent several years nurturing and educating children. Her diverse experience ranges from roles in Children's Ministry to positions as a Camp Counselor, High School Outreach Instructor, Foreign Exchange Student Host, and now as a camp instructor and administrative assistant at Soaring Chicken Farm. She is constantly seeking new ways to learn and discover the world around her, and she cherishes the opportunity to guide children on their educational and enriching journey. With a flair for creativity, Yvonne is always embarking on new projects. Her involvement with Soaring Chicken Farm unites all her interests, allowing her to jointly explore and learn about the farm through animals, plants, art, food, and faith.

 Katie has always been passionate about making a difference in the lives of children and has a passion for working in roles that support children with special needs.

After graduating at the University of Nebraska, with a degree in psychology, Katie relocated to California. She embraced new opportunities and began working with children diagnosed with autism. Shortly thereafter, she became a mother, which has been a transformative experience. 

Becoming a mom helped her discover her true calling—nurturing and caring for others. She has been a homeschooling mom for three years now and loves every minute of it.


In her free time, Katie cherishes family adventures with her husband, son, and beloved dogs. A lifelong animal lover, Katie has a special place in her heart for dogs and enjoys advocating for all animals and their well-being.

 Caitlin is a joy and life bringer everywhere she goes. She is a champion of people, a connector, a gatherer and an encourager. Caitlin is passionate about seeing people become rooted in Kingdom identity (as beautiful sons and daughters) and released in Kingdom authority (through joyful obedience and living a surrendered life). She loves prayer and worship nights with friends, random healthy foods, beach walks before sunrise, and kombucha. She has a high value for fun, connection, beauty, wonder, intentionality, play, and freedom. 


Caitlin met Christina in 2021 and they quickly became friends! She has enjoyed helping in different capacities with the farm ministry. Caitlin considers it a deep joy and honor to be a part of the Soaring Chicken Farm team!

  Chloe has a deep passion for raising up the next generation as those who intimately know Christ and are firmly established in their sonship in the Lord. She believes that to teach each child is much more than a job–it is a weighty calling by God Himself to train up warriors, worshippers, revivalists, evangelists, and the like into the greatest possible measure of their call in one of the darkest hours the world has ever known. 

Chloe has experience working in the public school system for years, but as a deep lover of the Lord and evangelist, she always felt greatly burdened by the limitations in not being able to share the gospel. After becoming close friends with Caitlin and catching wind of Soaring Chicken Farm Ministry’s mission, she felt the opportunity in joining the team was too good to be true. 

When Chloe is not teaching, she loves prayer and intercession, dreaming with God, exploring, being with her family and friends, writing, missions, and anything that provokes childlike wonder. She is honored to be a part of Soaring Chicken Farm Ministry!

Christina Stroh-Founder & Instructor

Christina, a mother of two, harbors a deep passion for farming, her faith, and making a positive impact in the world. Since childhood, she has dreamed of living and working on a farm teeming with animals. Her journey through numerous life challenges, fortified by her faith, led to the establishment of Soaring Chicken Farm Ministry. She advocates the strength and solace faith can offer in tough times and encourages others to discover hope and significance in their trials, bolstering their resolve to persevere. Christina delights in guiding others back to God through His creations, illuminating the intentional design behind all things.
